Myanmar Young Chefs Culinary Challenge a Huge Success

Look out Michelin – Myanmar chefs are aiming to reach international culinary standards. In a bid to identify and encourage a generation of kitchen wizards, the Myanmar Chefs’ Association held its first Yangon Culinary Young Chefs’ Challenge on September 25 and 26 at Aung San Stadium.

“Participating in this event will help Myanmar chefs to reach international standards by gaining experience when they compete in other countries,” said Oliver Esser Soe Thet, president of the Myanmar Chefs’ Association and one of the competition judges.
Competitors had to prepare a main course for beef, poultry, seafood and pasta; decorate a wedding cake; carve fruit and vegetables; and make bread and pastry, plus two different desserts.
Contestants included 58 young chefs, all aged under 25, from 14 top Yangon hotels and restaurants, including Sedona, Traders and Parkroyal.
But it was the team from Le Planteur that stole the show, taking out the top prizes in the beef, seafood, pasta and poultry sections. Traders won best dessert, while Parkroyal took out the best pastry section.
“I prepared for about two months to compete in this challenge. I learned a lot from foreign chefs by participating. They taught us what to do and what not to do,” prizewinner Ma Zin Myo Nwe of Le Planteur restaurant told The Myanmar Times.
Ma Zin Myo Nwe said she loves cooking and hopes other Myanmar women will be inspired to follow her example.
While competing against each other, the young chefs not only showcased their skills but also exchanged views with industry colleagues and networked with international chefs.
“All participants are qualified professionals ... They need practice to take part in international competitions, but they should create Myanmar traditional food as well as international dishes,” said Ko Than Zaw Oo, who was one of the judges.
Other judges included Chan Tuck Wai from Singapore, former Ministry of Hotels and Tourism official U Than Lwin and Myanmar Chefs’ Association deputy leader Daw Thuzar Myint.

1st Yangon Culinary Young Chefs Challenge ended and supported WACS FEED THE PLANET initiative
The 1st Yangon Culinary Young Chefs Challenge 2013 successfully finished just few days ago. Even though the event is already behind us, excellent atmosphere, interesting program, satisfied competitors and sponsors as well as the great number of visitor will be still talking about this great competition and cheerfully waiting for the next one.
The entire competition was conducted under the supervision of WACS certified Judges and other national and international professionals that followed the highest standards. While the winners proudly and justifiably received their prizes, sponsors or the competition made sure they received some valuable awards as well. Furthermore, during the event educational workshop on food safety and hygiene, Halal diet and modern culinary trends was held thanks to the wonderful presentations made by international speakers. Furthermore, Myanmar professional baristas preformed a two hour session ‘Barista training’ as to educate young Myanmar baristas and raise the awareness of this important hospitality segment.

As being a WACS member since 2000, Myanmar Chefs Association has been actively involved in many aspects of raising culinary standards, helping national industry to flourish and also provide help those in need. Thanks to the initiative made by the President of the Myanmar Chefs Association and Board member of WACS initiative World Chefs Without Borders, Oliver Esser Soe Thet, and his team a great humanitarian action was taken. All the bakery and pastry products were brought to an organization that takes care for elder people, offering them a great gastronomy experience that mostly likely they haven’t had the chance to taste. Cooked meals went in hands of those in need, some skillfully and completely sanitary safe wedding cakes made by the competitors were sold for the Chefs Without Borders Myanmar, purposes that will be again use for humanitarians activities. Moreover, some hot meals made by volunteers and WCWB Myanmar Chefs were specially prepared for charity purposes. “It is all very possible if it’s well planned, taken care of and managed from the beginning”, said Oliver Esser Soe Thet.
Myanmar World Chefs Without Borders, national members of the Myanmar Chefs Association, were greatly active the last couple of years and showed excellent results in their humanitarian missions like, closely related also to WACS Feed The Planet initiative:
“Health Food for Healthy Teeth”, financial aid for medical operations and treatments, schools reconstruction and building, “Clean the beach” activity”, plenty of good actions in the field of community public service, donations for sport and recreational activities as well as the medical equipment, volunteer work to raise the educational standards and make knowledge available to everyone. As many new ventures to come, there seem to be no borders for Myanmar Chefs!

Report on WACS APF Young Chefs Gathering

Report on WACS APF Young Chefs Gathering

The WACS Asia Presidents Forum (APF) Young Chefs Gathering was held on 15 and 16 September 2013, in Kuala Lumpar, Malaysia.

Representatives of eight Young Chefs Club from Asia attended the gathering, with a total of more than 40 participants. The last time an asian young chefs gathering was held was in 2007’s APF.

The Young Chefs visited the Selayang Wholesale Market in the wee hours of the morning, and learned about the local produce and fishes available. They were then treated to the best Nasi Lemak (Coconut Rice) in town, for breakfast.

Most of the young chefs who came as strangers were quick to have the ice broken, and started to interact with one another. The Chefs Association of Malaysia also hosted the participants to a sumptuous lunch at the Parkroyal Hotel.  They then proceeded to a meeting room for an afternoon of discussion on topics ranging from competitions, exchange programs, connectivity and sharing about their Young Chefs Club. Andy Cuthbert, Chairman of the WACS Young Chefs Development Team also shared with them his working experiences and about the Bill Gallagher Young Chefs Forum 2014.

On Day Two, the young chefs joined in their country association Presidents for their meeting. They came to understand what the other country associations were doing, and the functions of WACS. The young chefs were also given an hour to present themselves, which the presidents of the respective YCCs took the opportunity to showcase their clubs. Two YCCs were also introduced into the our family of Young Chefs Clubs: The LTB Philippines Young Chefs Club and the Korea Young Chefs Club. Other activities during the APF included a Dilmah Tea pairing workshop, and the opening dinner of the Food and Hotel Malaysia 2013.

The WACS Young Chefs Development Team would like to thank Chefs Association Malaysia and Youth Chefs Club Malaysia for arranging the gathering and making it a success.

2013 HTN APPRENTICE CHEF CULINARY COMPETITION

2013 HTN APPRENTICE CHEF CULINARY COMPETITION
"Australia's largest professional cooking competition for budding chefs“
HTN coordinates Australia's largest competition series annually for future chefs.  The well publicised skills shortage in the commercial cookery sector highlights the need to promote the career of a professional chef and HTN actively pursues applicants to meet their demand average of 100 cooking apprenticeship vacancies listed all year round.

The competition provides an ideal opportunity for cooking apprentices and trainees to engage in structured skill development, further enhance their unmistakable passion for the culinary art and celebrate the excellence of cookery as a career without limits.  It also provides an opportunity for apprentices and trainees to network, form long lasting friendships with other like minded people and to display their individual culinary talent.

HTN will coordinate the 2013 competition series which will encompass a new and improved format with five (5) regional heats throughout NSW and ACT - thus providing the industry with the largest and most exciting commercial cookery competition in the country.  (250+ Apprentice Chefs competed in 2012) with cash and great industry prizes up for grabs.

The next regional heat is scheduled for 10:00am on Wednesday, 10th July 2013:
TAFE NSW Hunter Institute – Hamilton Campus
Building A, 91 Parry Street
Newcastle West NSW 2302

You are invited to attend as a spectator.  Competitors will be presenting the dishes from 1:00pm.

The best performing HTN Apprentice Chef across all heats i.e. the HTN Apprentice Chef that scores the highest points in total across 5 regional heats will be provided a unique 2 day paid work experience opportunity with renowned Chef Shannon Bennett at Vue de Monde in Melbourne.  This experience includes airfares and accommodation.

Meat and Livestock Australia (MLA), Krio Krush, Fraser and Hughes, Futura Group, Peter McInnes, HOSTPLUS, Sandhurst Fine Foods, Community First Credit Union, Service Skills NSW, Game Farm Pty Ltd, TAFE NSW and CIT have generously supported HTN as sponsors of this initiative, ensuring that the commercial cookery sector's future is assured.

HTN is a not for profit, group training organisation established by industry, for industry to employ hospitality apprentices and trainees and thus return to industry highly qualified skilled technicians for tomorrow.  HTN employs hundreds of apprentice chefs, hospitality trainees and apprentice butchers throughout NSW and ACT and is the leading hospitality specific group employer in Australia.

It's all about Foie Gras... lucky YCCI members

Greeting for all Young Chefs around the world.

Last Thursday, June 27th 2013, Young Chef Club Indonesia (YCCI) with Classic Fine Foods Indonesia and ROUGIE were held a seminar named "It's all about Foie Gras". The object we learned was absolutely a Foie Gras. It is held at "Miele Kitchen Showroom" Jakarta. Here, we learned from the history of Foie Gras until how to cook it in some ways. This event was open for public with limited seat, just for 25 person.

The seminar was started by a speech from Mr.Benjamin Fanca, as a Marketing Assistant from Classic Fine Foods Indonesia. He welcomed us and introduced himself. After that, we were going to the main part, the seminar about Foie Gras with Chef Jocelyn Deumie. He is a chef from France, but he is working in Japan. He used to work at the Restaurant La Grande Table de Kitamura (Nagoya, Japan) before joining ROUGIE Japan's team as a Culinary Advisor. Chef Deumie showed us a presentation about history of Foie Gras and the story after until the present. He gave us great insights into so many new things we haven't known about Foie Gras before.

After the presentation, Chef Deumie let us into the kitchen. Yes! It was Cooking Demo time! Chef Deumie explained about the product before he started cooking. He told us the mise en place for Foie Gras. Because when we missed something in preparation, we couldn't get a good result after cooking. After that, he shown us some cooking method for the Foie Gras. They are: Poached, Pan seared, Pan fried tataki, Poached then Pan seared, Poached with Artichoke, and Stuffed meat ball with Foie Gras. We noted all the step-by-step, then when it was done, we taste it. Yummm..!! The result taste from all methods was delicious! (But I like the Poached and Stuffed meat ball :-p).

Before we ended this event, Mr.Benjamin gave us many boxes of Pizza for our lunch. Then, this event was ended with photo session together with all participants and Chef Deumie. Our heartfelt gratitude to Chef Deumie and all parties that have supported this event. I wish someday we (YCCI) could have a time to learning together with another Young Chef Club from another countries. Gathering and telling about culinary from each country.
